Roasted Vegtables and Garlic Chicken

This is one of my favourite meals to cook.

Everyone who knows me knows I don’t do measuring and I don’t do quantities, I just thrown stuff in depending on how many I am feeding!

You Will Need:

Chicken Breasts

Courgette

Broccoli

Baby Tomatoes

Red Onion

Leeks

Goats Cheese

Lazy Garlic

Baby Potatoes

Pitta Bread

Roasted Vegtables and Garlic Chicken

Preheat the oven to gas mark 5 /190c.

Place the potatoes in a pan to boil, at the same time put olive oil in a roasting dish and place into the oven.

Chop the goats cheese, red onion, leeks, courgette and broccoli.  Boil the broccoli for 5 minutes to soften.

Once the broccoli is ready place it all into an oven dish along with the baby tomatoes and place in the oven.  Season with black pepper.

Remove the potatoes and place into the pre headed oven dish with olive oil and allow to roast.

Chop and fry the chicken breast adding a couple of teaspoons of lazy garlic, allow to brown and heat through.  You can also add a touch of white wine to glaze the chicken.

Place the chicken into the oven.

Leave all of the items to cook for about 30 – 45 mins.

Serve with warm pitta bread.

What I really love about this apart from the amazing taste is the fact I can clean all of the pots and pans whilst the food is cooking which means less to clean after the meal!
